Wash the apple, remove the core and cut into thin slices.
Cut the cooked beetroot into strips. Mix the beetroot, grated carrot, apple and iceberg lettuce together in a bowl, stir together and season with a little pepper.
Place a chili tortilla on a plate and spread a quarter of the beetroot, carrot, apple and iceberg lettuce mixture over the tortilla. Spread a quarter of the Bettine goat’s cheese pearls over the mixture.
Fold the top and bottom of the wrap inwards and roll up the entire wrap with the filling in the middle. Repeat these steps with the remaining tortillas.
