  • 125 gr Bettine goat's cheese plain
  • 10 gr fresh parsley leaves
  • 10 gr dill
  • 10 gr chives

With this tasty recipe, you avoid having to throw food away and an easier recipe hardly exists.
Frittata: an Italian omelette consisting of vegetables, egg and herbs. Super simple, incredibly delicious and above all, you can vary endlessly! This recipe from Uit Paulines Keuken is finger-licking good! 

Preheat the oven to 200 degrees (top and bottom heat).

Chop the garlic finely. Cut the red onion into wedges and halve the tomatoes. Large tomatoes can be sliced or quartered if necessary. Chop the green herbs very finely and mix half of them into the goat's cheese.

Beat the eggs with the cottage cheese. Add the garlic. Season with salt, pepper and the remaining green herbs (keep some behind for garnish).

Heat a dash of olive oil in an oven-proof pan. Pour the eggs into the pan. Divide the tomatoes (keep some behind for garnish) and the red onion wedges over the eggs. Spread the goat's cheese over the frittata. Cook the bottom for about 6 - 8 minutes on a low heat.

Place the frittata in the oven and cook for another 5 minutes until the top is also set. Garnish the frittata with some fresh tomatoes and green herbs.
