  • 1 tsp Ras el Hanout
  • 1 tsp paprika powder
  • 500 g mixed tomatoes, different colours and sizes
  • 1 red onion
  • 10 g fresh mint
  • 1 lemon
  • 1 Tbsp tahini
  • 150 g Bettine No3
  • 50 g pomegranate seeds
  • Olive oil, pepper and salt

This couscous dish with tomato salad is super easy to make and also very tasty, thanks to the combination of the creamy Bettine No3 goat's cheese and the pomegranate seeds. The fresh mint combined with the spicy flavours and freshness of the lemon finish the salad. It doesn't get any better than this, so enjoy it to the fullest!

Prepare the couscous according to the instructions on the package, with a dash of oil and the Ras el Hanout and paprika powder in it. Season with some salt.
Slice the tomatoes and the red onion into strips. Chop the mint finely.
Spread out the tomatoes on a plate and sprinkle with the onions and mint. Sprinkle with the juice of half a lemon. Cut the rest of the lemon into wedges. Drizzle the salad with the tahini and some olive oil.
Cut the goat's cheese into slices and break the slices into pieces. Divide the goat's cheese over the salad and sprinkle with the pomegranate seeds; add some salt and pepper to taste.
