Tomato pepper soup with basil and goat cheese balls

Try making this tomato pepper soup with basil and goat cheese pearls! A very tasty soup that is on the table in 30 minutes. A nice starter or ideal for lunch. Add a nice roll and you're done!

Ingredients

for 4 persons
100 g Bettine pearls
5-6 tomatoes
2 red pointed peppers
200 g carrot
1 onion
2 garlic cloves
1 small tin tomato paste
dash of olive oil
1 vegetable bouillon cube
800 ml water
large handful of fresh basil

Preparation

    1. Chop the onion. Chop the garlic finely. Cut the tomatoes into wedges. Cut the pepper and carrot into pieces.
    2. Heat a dash of olive oil in a pan. Sauté the onion until it becomes glazy. Add the garlic and fry for a minute.
    3. Add the tomato puree and stir well.
    4. Then add the carrot, pepper and tomatoes. Stir well again.
    5. Pour in the water and throw in the stock cube. Bring the soup to the boil and simmer for 20 minutes with the lid on the pan.
    6. Add the basil and season the soup with a little pepper. Then puree the soup smooth with the hand blender.
    7. Ladle the soup into bowls. Top the soup with the Bettine goat's cheese pearls and some fresh basil leaves, if desired.
