Tacos with BBQ salmon and Bettine Goat's Cheese

  • 500g salmon on the skin 
  • 1 tbsp Mexican herbs 
  • 3 tbsp olive oil 
  • 500g cherry tomatoes on the branch 
  • 8 mini tortillas 
  • 150g beetroot julienne 
  • 1 bunch coriander 
  • 1 lime 
  • 100g Bettine Plain or Garlic & Herbs

Forget the original tacos and try this taco with BBQ salmon and Bettine goat's cheese. These tacos have a delicious composition due to the smoked salmon and the aromatic goat's cheese. Definitely worth trying!

Prepare the barbecue (or use a grill pan). 
Rub the salmon with the Mexican herbs and 1 tbsp olive oil. Season with salt and pepper. Rub the tomatoes and tortillas with the rest of the olive oil. 
Place the salmon in the BBQ clamp or in the aluminum tray. Grill on the BBQ for 3 minutes per side, so that nice grill marks are created. Also put the cherry tomatoes trusses and the tortillas on the BBQ and grill briefly. 
Place the tortillas on a plate and fill them with the beetroot julienne, grilled tomato and pieces of salmon. Sprinkle with coriander leaves and crumble the Bettine goat's cheese. 
Cut the lime into wedges and serve with the tacos.
