Do you want to put snacks on the table quickly and easily that are also super tasty and out of the ordinary? Then you must try these goat's cheese bruschettas with rhubarb. A delicious combination! 

Cut rhubarb in pieces 5 cm long and mix it with sugar and vanilla extract in a bowl. Grease the baking form with butter and place the rhubarb in there in one layer. Bake it for about 10-15 minutes in a preheated to 200 degrees oven. The bakingtime depends on the thickness of the rhubarb. It should be soft but also needs to keep the shape. While the rhubarb is in the oven, prepare the bruschetta. Slice the ciabatta and grill the pieces till they gain a nicely golden color. Place the rhubarb on the bruschetta. There will be much syrup left in the baking form. Use it if you want to give extra juiciness and sweetness to the bruschetta. Decorate the dish with a generous amount of Bettine goat's cheese with honey and fresh strawberries. Sprinkle the bruschetta with golden brown baked almond flakes and mint leaves. Serve them warm.
