These fresh rice rolls can be varied with all kinds of vegetables. A tasty, healthy & easy to make meal with goat's cheese, various vegetables and a sweet and spicy sauce. It can be served within 25 minutes and fits perfectly on a sunny day.
Peel the mango and cut into cubes. Puree together with the mayo and the chili sauce to a smooth dip with the immersion blender.
Cut the cucumber, yellow pepper, red onion and Chinese cabbage into thin strips.
Soak the rice sheets one by one in a bowl of cold water. Divide a bunch of the vegetables in a rectangle over the middle and place two slices of goat's cheese on top. Fold the sides in, then fold the bottom of the sheet up. Roll from bottom to top to neatly wrap the roll.
Halve the rolls to show the colors of the contents and serve with the mango dip. Sprinkle with the cress.
