spinach salad with goat's cheese and walnuts

  • Salad:
  • 125 grams Bettine goat’s cheese natural or honey
  • 300 grams fresh spinach
  • 75 grams walnuts
  • 125 grams blueberries
  • 1 shallot
  • Dressing:
  • 1 tablespoon white wine vinegar
  • 5 tablespoons olive oil
  • 1 tablespoon mustard
  • 2 tablespoons honey
  • salt and black pepper, to taste

Wisk the ingredients for the dressing in a bowl.

Chop the shallot and the walnuts coarsely. Put the spinach in a bowl. Sprinkle the dressing over the spinach and season with salt and freshly ground pepper.

Add the walnuts, the chopped shallot and the blueberries to the spinach salad. Crumble the Bettine goat’s cheese plain or honey over the salad.

TIP: This salad is also delicious for lunch.
