  • 50 grams Bettine Goat's cheese pearls
  • 100 grams baby spinach
  • 1 large orange, diced
  • 4 tbsp roasted pistachios
  • Lemon dressing
  • juice of half a lemon
  • 1 tbsp dijon mustard
  • 4 tbsp avocado oil
  • 2 tbsp maple syrup
  • salt and pepper to taste

This delicious spinach & orange salad with pistachios is the perfect addition to your dinner. Not just a feast for the eyes, but for the tongue as well: a beautiful salad with goat's cheese, spinach, orange segments and a fresh dressing that makes it complete.

Cut the peel and the white skin off the oranges. In a large bowl, cut out the segments between the membranes and collect the juice.

Make a vinaigrette of the lemon juice, mustard, oil and maple syrup. Mix everything together well and season further with salt and pepper.

Add the spinach and half of the orange segments to the dressing and stir well. Peel and chop the pistachios, crumble the goat's cheese and garnish the dish with these. Finally, sprinkle with the collected juice and serve immediately.
