  • 100 grams of coarse breadcrumbs
  • bell pepper
  • 2 beaten eggs
  • frying oil
  • 150 grams Bettine goat cheese plain
  • 2 teaspoons of sun-dried tomatoes
  • 3 tb pine nuts
  • pinch of cayenne pepper
     
  • Jean Bâton truffle mayonnaise or truffle tapenade, truffle oil and mayonnaise

Croquettes are always a great idea, whether it's during a football match, a birthday, lunch, in the summer or in the winter, we just love those rolls with crispy crust. Difficult to choose between the many varieties of delicious croquettes, but today we opt for goat cheese croquettes with truffle mayonnaise. You can prepare them in advance, so you only have to bake them. Super handy and above all very delicious!

You start by making the mixture of goat's cheese. Mix the goat's cheese, sundried tomatoes, cayenne pepper, paprika powder and the roasted pine nuts together. Place the croquettes for at least 2 hours in the refrigerator to be well stiffened.
Roll small rolls of the mixture with your hands or with two spoons. It is possible to freeze these rolls afterwards before you start the baking process or simply save it for the next time.
Now form your cheese croquettes step by step. Roll the balls through the fine breadcrumbs. Then roll them through the beaten egg and immediately afterwards through the coarse breadcrumbs. Your croquettes are ready to be baked!

Serve the croquettes hot. They are tasty with and without truffle mayonnaise. If you want to make this yourself, stir in a bit of truffle tapenade and a drop of truffle oil through mayonnaise and season to taste with salt and pepper. Be careful when adding the truffle tapenade, as it can quickly dominate.
