Preheat the oven to 180 degrees.
Heat a baking pan with olive oil and fry the onions over low heat until it's soft and caramelized. Add the vinegar, honey, thyme, salt and pepper to taste and fry briefly. Crumble the Bettine goat's cheese and add it to the onion mixture. Spread a spoon of the filling on the bottom left of the phyllo dough. Fold the right bottom corner up into a triangle. Now continue to fold until you have a triangle.
Brush the samosas with a little bit of olive oil. Place the samosas on a baking tray lined with parchment paper and bake for 20 minutes until golden brown.
Serve with chili sauce.
You can also fry the samosas.
