Roast beef burger

  • 1 shallot
  • 8 small gherkins
  • 4 sturdy burger buns
  • 100 g fresh spinach
  • 200 g Bettine goat's cheese plain
  • 200 g roast beef
  • 1 handful of cress
  • 4 tbsp honey mustard sauce (or regular honey mustard)
  • Salt and pepper to taste

This sandwich is delicious as a lunch, but can also be served as a dinner, for example with a green salad and sweet potato fries with truffle mayo.

Tip: Also delicious with pepper roast beef.

Chop the shallot and cut the gherkins diagonally into thirds.
Cut the rolls open and spread the spinach on the bottom and the slices of Bettine on top. Flatten the roast beef lightly on the goat's cheese and divide the shallot and gherkins over it. Sprinkle with cress and season with salt and plenty of freshly ground pepper.
Spread the caps with the honey mustard sauce on the underside and place them on top of the burgers.
