Red coleslaw salad with watermelon and Bettine no.3

  • 1 fresh corn cob (or 1 small can of corn) 
  • tbsp olive oil
  • 1/4 red cabbage 
  • 1 small red onion 
  • ½ lemon 
  • 1 tsp cumin seeds
  • 1 tsp ginger powder
  • 400 g watermelon 
  • 250 g Bettine No.3 
  • 50 g watercress 
  • 1 small handful of coriander
  • Salt and pepper

Heat a grill pan on the fire. Brush the corn with a tablespoon of olive oil.
Grill the corn on all sides in the grill pan so that nice grill marks appear, about 10 minutes. Turn regularly.
In the meantime, cut the red cabbage and red onion into strips as thin as possible. Mix them with the grated juice of half a lemon, the cumin seeds and the ginger powder. Season with some salt.
Cut the watermelon and Bettine No.3 into slices and then into smaller triangles.
Divide the red cabbage lettuce over a large bowl and sprinkle with the watercress and coriander. Place the melon and goat's cheese slices on top and sprinkle with some extra black pepper.
