A good pasta never gets boring. This pasta with only 5 ingredients contains a lot of pumpkin and the goat's cheese makes it deliciously creamy and tasty. As far as we are concerned, this is a super vegetarian feel-good recipe!
Put a large saucepan on a medium heat and cook the pumpkin cubes in it for about 10 to 15 minutes.
Boil the penne according to the instructions on the packet, drain it and mix in a little oil if necessary. When the pumpkin cubes are cooked, drain them and mix with the boiling cream and half of the goat's cheese. Add all this in a blender and mix to a smooth sauce. Divide the pasta over 4 plates. Season the pumpkin sauce with salt and pepper and spoon the sauce onto the pasta in the plates. Crumble the rest of the goat's cheese and sprinkle it over the pasta together with the parsley. Serve immediately.
