  • 1 jar grilled red pepper
  • 2 spring onions
  • 75 grams of unroasted cashew nuts
  • 100 grams of Bettine goat's cheese plain

  • 1 tablespoon mango or apple cider vinegar
  • 2 tablespoons oil from the pot of the grilled pepper
  • 1 teaspoon honey
  • crushed chili flakes to taste

This simple salad from the Sandwich Formula with Mango, Goat Cheese Grilled Peppers is one of our new favorites. It's simple to make and so delicious! The soft taste of the bell pepper, the sweetness of the mango and the savory taste of the goat's cheese are a golden combination. The mango is a surprisingly tasty addition. Taste and experience it yourself!

Cook the penne according to package directions. Then rinse the pasta in a colander with cold water. Heat a frying pan on the stove without oil. Roast the cashew nuts for a few minutes. Shake the pan regularly and keep a close eye on the nuts. Remove them from the pan as soon as they are nicely browned. Then roughly chop them. Peel the mango and cut into cubes. Cut the grilled bell pepper into small pieces. Cut the spring onion into rings. Stir the ingredients for the dressing together. Toss the pasta, arugula and dressing together. Divide the mango, grilled bell pepper and cashew nuts over the salad. Finally, crumble the goat's cheese and divide it over the salad.
