Mango and goat cheese salad

Simple but oh so delicious salad with mango from Uit Paulines Keuken. It will be on your table in 20 minutes. We combined sweet mango slices with fresh lamb's lettuce, chicory sprouts, slices of smoked chicken and creamy Bettine goat's cheese pearls. Spice up the salad with pickled sweet and sour red onion rings, marinated for 15 minutes in red wine vinegar and maple syrup. Finely chopped chives on top and your salad is not only very tasty, but also looks amazing!

Cut the skin off the mangoes and slice the flesh. Slice the smoked chicken.
Remove the skin from the red onion and cut into thin rings. Mix the red onion in a bowl with red wine vinegar and maple syrup and leave for 15 minutes.
Cut the chicory into quarters and separate the leaves. Place them together with the lamb's lettuce in a nice salad bowl. Place the slices of chicken and mango between them. Pour the red onion dressing over them. Chop the chives and sprinkle over the salad. Remove the Bettine goat's cheese pearls from the packaging and divide over the salad. Drizzle some more olive oil on top if desired and sprinkle with salt and pepper.
