salads with goat's cheese

Green Salad | nectarines | roasted chicken | bettine goat cheese balls

preparation time

20 minutes


2 persons:

125 grams salad
100 g goat's cheese balls natural
125 grams of nectarines
600 grams of spiced chicken drumsticks
1 piece of red onion
3 large tablespoons corn
Handful of walnuts

For the vinaigrette:
10 tablespoons olive oil
5 tablespoons balsamic vinegar
2 tablespoons of honey
Salt and pepper
2 minced garlic cloves
Teaspoon sugar

And this is how you make it:
Use a frying pan to bake the drumsticks tender and nicely brown. Cut the nectarines into thin slices and the onion into thin rings. Divide the salad among the plates and divide the nectarines and the onion rings amond the salad. Cut the meat (you can serve it hot, lukewarm or cold) of the drumsticks and divide this also over the salad along with the goat's cheese balls. Finish with the red onion, corn and walnuts and drizzle the vinaigrette over the complete salad.

Recipe vinaigrette:
Put the olive oil, balsamic vinegar and honey in the dressing shaker or whisk the mixture together with a whisk. Add salt and pepper and taste the mixture. If needed add some sugar.
