Fancy a tasty salad for lunch? Then make this fresh spring salad with pointed cabbage, cucumber, lime, pepper and goat's cheese. By combining the pointed cabbage with the pepper and mild goat's cheese, the salad gets a nice balance of spicy and mild flavours. Finish this salad with a simple dressing of lime, yoghurt and almond paste, serve with a nice piece of fresh bread and the enjoyment can begin.
Cut the pointed cabbage into thin strips, this is best done with a mandolin. Thinly slice the cucumber and white onion and finely chop the chives.
Mix the yogurt with the almond paste, zest and juice of the lime and cumin seeds.
Mix the dressing with the vegetables, toss well so that everything is covered with a layer of dressing. Season with salt and pepper.
Toast the almond slivers in a dry frying pan until golden brown.
Sprinkle the salad with the pink pepper, the almond shavings and finally the Bettine pearls.
