Goat's Cheese salad with mango & avocado

  • 100 grams of rocket
  • 1 mango
  • 125 grams of Bettine goat’s cheese  
  • 1 avocado
  • 40 grams of almonds
  • 100 grams of black beans
  • 1 bell pepper
  • 2  spring onions
  • 4 tablespoons of olive oil
  • 2 tablespoons of white wine vinegar
  • salt and pepper - to taste

This is a delicious salad that you can easily make at home. The sweet mango is a great combination with the mild taste of our goat's cheese.

Divide the rocket over 2 plates. In a small bowl, combine the vinegar, olive oil, salt, and pepper. Pour the salad dressing over the salad leaves. Cut the mango, bell pepper and avocado into cubes and drain the black beans in a colander. Cut the spring onion into rings.

Divide the mango, avocado, bell pepper and black beans over the salad leaves. Place the goat’s cheese slices on top and garnish with the spring onion and walnuts.
