Divide the rocket over 2 plates. In a small bowl, combine the vinegar, olive oil, salt, and pepper. Pour the salad dressing over the salad leaves. Cut the mango, bell pepper and avocado into cubes and drain the black beans in a colander. Cut the spring onion into rings.
