During Bettine Saladay, Pauline from ‘’Uit Pauline’s Keuken’’ makes this delicious goat’s cheese salad with a blackberry dressing. Mix all the ingredients for the blackberry dressing in a food processor until it is smooth. 

Mix all the ingredients for the blackberry dressing in a food processor until it is smooth. Sieve the dressing through a fine sieve and season with some salt and pepper. Set the dressing aside.

Remove and wash the baby romaine leaves. Pat them dry and spread them over a large bowl together with the arugula salad mix. Slice the cucumber into ribbons with a cheese slicer, and spread over the salad.

Cut the avocados in half, remove the seed and slice the pulp into thin slices with a cheese slicer. Of course, you can also just cut it with a knife. Cut the red onion in half rings, the apple into slices and divide them, together with the avocado slices and the blackberries, over the salad. Divide the pearls of Bettine goat’s cheese over the salad and add some fresh basil.

Garnish the goat’s cheese salad with some chopped pistachio nuts and the blackberry dressing.
