
A rich salad is never boring. Gently sunny days break through again and with that the salad season starts again. We have prepared a nice light fruity salad, in which the goat’s cheese provides a savory note.

A rich salad is never boring. Gently sunny days break through again and with that the salad season starts again. We have prepared a nice light fruity salad, in which the goat’s cheese provides a savory note.
Rinse the blackberries in a colander and drain. Rinse the apple and cut into wedges. Grill the apple briefly in a grill pan until it turns golden brown. Divide the arugula over two deep plates, place the apple wedges on top and then sprinkle the blackberries and some cherry tomatoes on top. Using a mandolin, cut a few thin long slices of cucumber, roll them up and place in the salad. Place a few slices of goat’s cheese on the salad and garnish with the pine nuts and the edible flowers.
You can also make a dressing of the blackberries by mashing some blackberries in a bowl and mixing them with olive oil. Flavor the dressing with salt and pepper.
