We have said before that Bettine goat’s cheese is easy and good to combine with all kinds of ingredients. We made these lollipops to give that extra power. What makes these lollipops so special is that you can make many variants.
The basis of this recipe is the same for every lollipop. Mix the goat’s cheese with the crème fraîche. Roll balls of the mixture to the desired size. Now you will vary with the different toppings. With a food processor, cut or chop all the ingredients of the variation into a coarse mixture. Divide the chopped ingredients on a plate and roll the goat’s cheese balls through it. Put the goat’s cheese balls in the refrigerator for at least half an hour. Insert the breadsticks into the balls at the time of serving. This way the sticks stay crispy and firm.
