Fruit salad with Bettine goat’s cheese

  • 150 grams of lamb's lettuce
  • 200 grams of strawberries
  • 100 grams of blueberries
  • 125 grams of Bettine goat’s cheese
  • ½ cucumber
  • 30 grams of pine nuts
  • 1 tablespoon of sugar


  • 2 tablespoons of olive oil
  • 2 teaspoons of balsamic vinegar
  • 1 tablespoon of lemon juice
  • 1 tablespoon of white wine vinegar

Have you ever been looking for new ways to use fruit other than in a dessert or in smoothies? Then put them in a salad and finish with a fresh dressing. Easy and oh so delicious!

Divide the washed lamb's lettuce over 4 plates.

Wash the cucumber and cut into small pieces. Wash the strawberries, then remove the tops and cut into equally beautiful pieces. Cut the Bettine goat’s cheese Plain in equal slices.

Meanwhile, heat a frying pan, fry the pine nuts and add the sugar at the same time. Bake until the pine nuts are golden brown and remove from the pan to cool.

Make a dressing with the oil, balsamic vinegar, lemon juice and white wine vinegar.

Divide the strawberries, blueberries, cucumber and the sugared pine nuts over the lamb's lettuce. Finally, divide the Bettine goat’s cheese over the fruit salad and drizzle the remaining dressing over it, enjoy!
