We simply love sweet potatoes from the oven. Simple, but very tasty. And it is something different from your regular potato slices. The soft goat's cheese goes very well with the crunchy sweet potato.
Preheat the oven to 220 degrees.
Cut the sweet potato into slices and grease the slices on both sides in my olive oil. Season to taste with salt and pepper.
Fry the sweet potato slices for 15 minutes, turning halfway through.
Top the sweet potato slices each with a slice of matured Bettine, pomegranate seeds, pine nuts and thyme leaves. If necessary, season the slices with salt and pepper.
Bake the plain goat's cheese (or the ripened slices) for 5-10 minutes until the sweet potato is cooked.
Serve warm or at room temperature with honey.
