Preheat the oven in grill setting to 220C.
Make the tomato sauce by cooking all ingredients (except the Bettine ripened goat cheese) over medium heat for 15 minutes.
Pour the tomato sauce into an oven dish and place the slices of ripened goat cheese on top.
Grill in the oven for 10 minutes until the goat cheese is golden brown in color.
Garnish with the coarsely chopped parsley.
