Cut off the ends of the chicory. Halve the chicory and cut into thin rays. Mix the mayonnaise, balsamic vinegar and mustard. Flavour with pepper and salt. Mix the chicory with the dressing. Cut the apple into thin slices, mix the chicory with the raspberry, apple, walnuts and Bettine goat's cheese natural.
Suggestion: Sprinkle some lemonjuice over your salad to give it a fresh taste and to prevent the apple from discoloration.
