Chicory salad with lukewarm goat's cheese from the oven

  • 100g mixed lettuce
  • 50g cherry tomatoes
  • half a cucumber
  • 1 stalk of chicory
  • 1 apple
  • 100g Bettine matured goat's cheese
  • 75g smoked bacon bits
  • half a lemon
  • salt and pepper
  • 4 slices of bread (nut bread, fig bread or sultana bread)
  • 2 tbsp toasted pine nuts
     
  • Dressing
  • 1 tsp lemon juice
  • 1 tsp honey
  • 1 tbsp semi-skimmed yoghurt
  • 1 tbsp olive oil

In the mood for a different salad? Try this salad, deliciously filled with different vegetables, and be surprised by its delicious taste.

Clean the chicory and cut out the bitter centre. Sprinkle with the juice of half a lemon to prevent it from discolouring. Cut the apple into equal slices. Also cut the tomatoes and cucumber into thin slices.

For the dressing, whisk together the honey, yoghurt, lemon juice and oil in a small bowl. Season with salt and pepper.

Fry the bacon cubes until crispy in a pan. Then add the apple segments and cook further. Leave everything to drain on a sheet of kitchen paper.

In a bowl, mix all the vegetables with the dressing.

Cut two thick round slices of goat's cheese. Cut a round toast out of each slice of bread and lay a goat's cheese on it. Sprinkle some honey over it and grill it in the oven.

Divide the salad between the plates and arrange the apple slices and bacon strips on top. Place a toast with goat's cheese in the middle.

Drizzle with the dressing and garnish with the pine nuts.
