A simple appetizer packed with flavour: that makes us happy! These bruschettas with ripened goat's cheese, thyme, honey and peach from the Sandwichformule are on the table within 15 minutes and are very tasty during a summer's day!
Preheat the oven to 200 degrees. Switch on the grill.
Cut twelve slices of the baguette. Place the baguette slices on a baking tray or a grid with baking paper. Grease the baguettes with olive oil. Sprinkle with freshly ground salt and pepper and grill the baguettes for 5 minutes in the hot oven until golden brown and crispy. Cut the peach into slices and brush them with a thin layer of sunflower oil. Put a grill pan on the cooker and let it get very hot. Grill the peach slices for a few minutes on both sides so that the fruit gets nice grill marks.
Cut the roll of Bettine ripened into slices. Cover the baguettes with the slices of goat's cheese. Divide the slices of grilled peach over it. Remove some of the thyme leaves and sprinkle them over the bruschettas. Finally, pour over some honey.
