Melt the chocolate in a water bath / au bain marie (make sure that the bowl containing the chocolate does not touch the water, the steam from the water will melt the chocolate). The chocolate must not get too hot. Stir it smooth and then let it cooldown. Melt the butter in a small pan. Meanwhile, crumble the cookie cookies, you can do this with a food processor or with a rolling pin. Mix the cookie crumbs with the melted butter. Grease the cake pan and press the cake crumbs into the cake pan with a spoon. Place the pie bottom in the refrigerator. Mix the cooled chocolate with the goat cheese with a hand mixer. Squeeze the lemon and mix the juice into the goat cheese mixture. Beat the whipped cream to a lumpy mass and carefully fold it into the cheese mixture. Divide the mixture over the cake base and put in the fridge to stiffen. Leave it in the fridge for at least a few hours. It is also ideal to prepare the cake a day in advance. When the cake is well done, garnish the cake with the red fruit.
