  • 1 sheet of ready made puff pastry
  • 1 leek
  • 125 grams of Bettine goat’s cheese
  • 40 grams of grated hard goat’s cheese (Bettine Grand Cru)
  • 5 sun dried tomatoes
  • 35 grams of walnuts
  • 3 eggs
  • milk
  • honey
  • salt and pepper
  • butter (for greasing)

Grease the quiche pan and preheat the oven to 200 degrees Celsius.
Line the baking tin with the puff pastry.
Prick holes in the bottom with a fork.
Cut the leeks into wafer-thin rings and spread over the bottom.
Cut the sun-dried tomatoes into small cubes and divide among the leeks.
Crumble 6 slices of the goat’s cheese over the leeks.
Roast the walnuts lightly in the pan (about 2 minutes until they have a nutty flavor). Chop coarsely and spread over the cheese.
Pour the honey over the goat’s cheese and walnuts.
In a bowl, beat the eggs well with 1 slice of goat’s cheese and a little milk.
Pour the egg mixture over the leek mixture.
Sprinkle with the grated cheese.
Place the quiche in the oven.
Bake the quiche for about 20 minutes.
