BBQ Aubergine with Bettine no.3

  •  4 aubergines 
  • 2 tbsp Za'Atar 
  • 4 tbsp olive oil 
  • 150g Bettine No.3 
  • 20g Thai basil 
  • 3 stalks of spring onion 
  • 4 tbsp harissa sauce 
  • 100g pomegranates 
  • salt and pepper

Delicious aubergines grilled on the BBQ. Perfect for a hot summer day. The grilled flavor of the aubergines and the goats' cheese topped with basil and spring onion gives a delicious taste sensation!

Preheat the barbecue (or use a grill pan for this recipe). 
Halve the aubergines lengthwise and cut the flesh crosswise. Rub with the Za'Atar and the olive oil. 
Cut the Bettine No.3 into 8 slices, pluck the leaves of the Thai basil and cut the spring onion into rings. 
Grill the aubergines in the pan or on the barbecue on the cut side for 5 minutes. Turn over and place a slice no.3 on each half. Grill for another five minutes. 
Place the aubergines on a plate and spoon over the harissa. Sprinkle with the spring onion, Thai basil and pomegranate seeds. Sprinkle with salt and pepper before serving.
